Air-Fryer Chicken & Veggie Dinner for 1
- 1 medium potato cubed
- 1 medium onion sliced
- 1/2 red pepper sliced
- 2-3 garlic cloves minced
- 2 tbsp olive oil
- Seasonings to taste:
- paprika
- Italian herbs
- dired rosemary
- chili flakes
- salt and pepper
- 1 bone-in, skin-on chicken thigh
- 1 bone-in, skin-on chicken drumstick
- Additional seasonings for the chicken same as mentioned above
- 2 knobs of garlic butter
- 1/2 lemon
Prepare the Air-Fryer Basket: Place a sheet of parchment paper in your air fryer basket. Add the cubed potato, sliced onion, red pepper, minced garlic, and olive oil.Season the Veggies: Sprinkle the seasonings (paprika, Italian herbs, rosemary, chili flakes, salt, and pepper) generously over the vegetables. Toss everything together until well-coated.Season and Add the Chicken: Place the chicken thigh and drumstick on top of the seasoned veggies. Sprinkle the same seasonings over the chicken, and if desired, add a knob of garlic butter on top of each piece of chicken for extra flavor.Add the Lemon: Place half a lemon in the basket alongside the chicken and veggies.Air-Fry: Air-fry at 200°C (400°F) for 25-30 minutes. Halfway through cooking, flip the chicken over to allow the other side to brown evenly, and give the veggies a quick toss.
