Avocado Bean Smash on Crispy Toast
- 1 can cannellini beans, drained and rinsed
- 1 avocado
- 2-3 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp chili flakes, or more to taste
- salt, to taste
- pepper, to taste
- 1 tbsp parsley, chopped
- 1 tbsp olive oil
- 1/2 lemon, juiced
Additional Ingredients:
- 2 slices of bread, toasted
- 1 tbsp dijon mustard
- 2 slices of gouda cheese
- 1 small handful micro greens
1. To make the Avocado Bean Smash, add all ingredients into a bowl, and using a fork, smash until combined. 2. Meanwhile, toast a thick slice of bread (or two) until nice and crispy - I like to do this in a pan with olive oil, or you can use a toaster. 3. To assemble, spread dijon mustard onto the crispy toast, add a slice of gouda cheese, spread on a heaping spoonful of the smash, and top with micro greens. Enjoy!
