Avocado Bean Smash on Crispy Toast

Ingredients
  

  • 1 can cannellini beans, drained and rinsed
  • 1 avocado
  • 2-3 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp chili flakes, or more to taste
  • salt, to taste
  • pepper, to taste
  • 1 tbsp parsley, chopped
  • 1 tbsp olive oil
  • 1/2 lemon, juiced

Additional Ingredients:

  • 2 slices of bread, toasted
  • 1 tbsp dijon mustard
  • 2 slices of gouda cheese
  • 1 small handful micro greens

Instructions
 

  • 1. To make the Avocado Bean Smash, add all ingredients into a bowl, and using a fork, smash until combined.
    2. Meanwhile, toast a thick slice of bread (or two) until nice and crispy - I like to do this in a pan with olive oil, or you can use a toaster.
    3. To assemble, spread dijon mustard onto the crispy toast, add a slice of gouda cheese, spread on a heaping spoonful of the smash, and top with micro greens. Enjoy!
