Ingredients

This recipe is delicious as a side dish to any meal, or as an impressive appetizer for your next dinner party!

Ingredients:

  • 4-5 sweet potatoes, about medium size 
  • 1/3 cup olive oil 
  • 1/2 cup grated parmesan 
  • 1/2 cup crumbled feta cheese 
  • 1 tsp Italian seasoning 
  • 1 tsp smoked paprika 
  • 1 tsp rosemary  
  • 1 tsp chili flakes  
  • 1 tsp salt  
  • 1 tsp pepper  

Instructions

Preheat the Oven:
Preheat your oven to 375°F (190°C).

Prepare the Sweet Potatoes:
Peel the sweet potatoes and slice them into 1/4-inch thick coin shapes. Place the slices in a large mixing bowl.

Season the Potatoes:
Add olive oil, Parmesan, feta, and all the seasonings to the bowl. Mix thoroughly to ensure each sweet potato slice is evenly coated.

Assemble in Muffin Tray:
Take several slices and stack them up, placing each stack into a muffin tray. You should have enough to fill 12 muffin molds. It’s okay to stack them higher than the edges of the molds to use up all the slices.

Bake:
Bake for 25-30 minutes, or until the sweet potato stacks are cooked through and golden brown on the top and edges.

Serve:
Remove the sweet potato stacks from the muffin tray and serve with a squeeze of fresh lemon juice for added brightness. Enjoy!
