Just like the Avocado Bean Smash Crispy Toast, but this time we’re making it into a deliciously cheesy quesadilla!

Avocado Bean Smash Ingredients:

  • 1 can cannellini beans, drained and rinsed 
  • 1 avocado 
  • 2-3 garlic cloves, minced
  • 1 tsp paprika 
  • 1/2 tsp chili flakes 
  • salt, to taste 
  • pepper, to taste 
  • 1 tbsp parsley, chopped
  • 1 tbsp olive oil 
  • 1/2 lemon, squeezed

Quesadilla Ingredients:

  • 2 wraps of choice
  • 1 tbsp dijon mustard
  • 3 slices gouda cheese
  • the Avocado Bean Smash
  • small handful spinach, chopped

Instructions:

  1. To make the Avocado Bean Smash, combine all the ingredients in a bowl. Use a fork to mash everything together until well combined.
  2. Spread Dijon mustard evenly on one side of one of the wraps, then generously spread the Avocado Bean Smash on top. Add the slices of Gouda cheese and chopped spinach (chopping the spinach is optional!).
  3. Place the second wrap on top to form the quesadilla.
  4. Heat a pan over medium-high heat and add a drizzle of olive oil, if desired. Pan-fry the quesadilla on both sides until golden brown.
  5. Remove from the pan, slice into quarters, and enjoy the cheesy goodness!
