Made with crispy salami, fresh eggs, and gooey cheddar cheese, all baked together in charming mini cocottes (I used Le Creuset’s), simple ramekins, or even muffin tins!

Ingredients (serves 4):

  • 20 slices of salami
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 Roma tomato, diced
  • Salt, to taste
  • Pepper, to taste
  • Chili flakes, to taste
  • 1 avocado, sliced (for topping)
  • Fresh chopped parsley (for topping)

Optional Add-ins: Spinach, mushrooms, bell peppers, or your favourite toppings.

Note: This recipe yields 4 egg cups using Le Creuset’s Mini Cocottes. If you’re using smaller ramekins or muffin tins, ingredient quantities may need to be adjusted – such as using one egg per cup instead of two.

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Assemble the salami cups: Use 5 slices of salami per mini cocotte or ramekin. Place one slice at the bottom, and layer the remaining four slices around the sides to create a cup.
  3. Add the eggs: Crack 2 eggs into each salami-lined cocotte or ramekin. Season with salt, pepper, and chili flakes.
  4. Top it off: Add diced tomato and a generous sprinkle of shredded cheddar cheese.
  5. Bake:
    • If using mini cocottes with lids, cover and bake for 15–25 minutes, depending on your preferred egg doneness. You can remove the lid for the final 5 minutes if you want a firmer top.
    • If using ramekins or muffin tins without lids, bake uncovered. Keep an eye on them as they may cook slightly faster.
  6. Serve:
    • If using mini cocottes or ramekins, serve directly in the dish with toppings like sliced avocado and fresh parsley.
    • If using muffin tins, gently remove the egg cups to serve.

Storage Tips:

These egg cups keep well in the fridge and are perfect for meal prep. Store in an airtight container for up to 4 days. Reheat in the oven, air-fryer or microwave before serving.
