This hearty and comforting Boursin Olive Pasta Bake is ready in only 30 minutes, and is (not to mention), insanely delicious! Cooked with olives, capers, mushrooms and tomatoes – one of the best flavour combinations for pasta. Try this recipe out and let me know what you think in the comments below!
Ingredients (serves 3-4):
- 2.5 cups pasta of choice, cooked
- 1 round of Boursin cheese (herb & garlic)
- large handful cherry tomatoes, whole
- 5-6 mushrooms, chopped
- 5 garlic cloves, minced
- 1 yellow onion, diced
- 2/3 cup green olives
- 1/4 cup olive oil
- 2 tbsp capers
Seasonings:
- 1 tsp salt
- 1 tsp pepper
- 1 tsp oregano
- 1 tsp Italian herbs
- 1 tsp chili flakes (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Baking Dish:
In a large baking dish, combine the cherry tomatoes, chopped mushrooms, minced garlic, diced onion, green olives, olive oil, and capers.
Season and Add Cheese:
Sprinkle the salt, pepper, oregano, Italian herbs, and chili flakes over the mixture. Stir to combine, then create a small circle in the center of the dish and place the Boursin cheese.
Bake:
Bake for 20-25 minutes, or until the tomatoes have softened and the cheese is melty and slightly golden.
Cook the Pasta:
While the dish is baking, cook your pasta according to the package instructions. Drain and set aside.
Combine and Serve:
Once the baking dish is done, stir the Boursin cheese into the vegetables to create a creamy sauce. Add the cooked pasta to the dish and mix until fully coated. Serve warm and enjoy!
