This Lamb and Gnocchi Kale Soup has it all – filled with nutrient dense protein, veggies, and carbs that will keep you happy and satisfied. A cozy, nourishing meal perfect for any season!
Ingredients
- 1000g lamb mince
- 1 tsp each of salt, pepper, Italian seasoning, & paprika (for the lamb)
- 2 medium yellow onions, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 6-8 cloves garlic, minced
- 1 tsp salt, pepper, Italian seasoning, and paprika (for the veggies)
- 2 cans whole tomatoes
- 4 cups chicken stalk
- 1 can coconut milk
- 500g gnocchi
- 6-8 cups kale, chopped
- 1 lemon, juiced
- grater parmesan cheese, to serve
Instructions:
Cook the Lamb: in a large pot over medium-high heat, begin to sauté the ground lamb. Season the lamb with 1 tsp each of salt, pepper, Italian seasoning, and paprika. Once the lamb is fully cooked, transfer it to a bowl and set aside (you will add it back into the soup later).
Sauté the Vegetables: in the same pot, using the leftover lamb juices, add the chopped onion, carrot, celery, peppers, and garlic. Season the veggies with another round of salt, pepper, Italian seasoning, and paprika. Sauté over medium-high heat for about 10 minutes, or until the vegetables are translucent.
Add the Tomatoes: add the two cans of whole tomatoes to the pot. Using a spatula, break the tomatoes into small pieces to help them blend into the soup.
Add Broth and Coconut Milk: pour in the chicken broth and coconut milk. Stir well, cover the pot, and bring the soup to a boil, which should take about 10 minutes over medium-high heat.
Simmer and Add Gnocchi: once the soup reaches a boil, reduce the heat to a simmer. Squeeze in the juice of 1 lemon, then add the uncooked gnocchi. Simmer for 5 minutes, allowing the gnocchi to cook.
Add Lamb and Kale: return the cooked lamb to the pot, then add the chopped kale. Stir to wilt the kale, and simmer for another 2-3 minutes, or longer if desired.
Serve: optionally, top with extra grated Parmesan cheese, fresh parsley, or dill. Serve warm and enjoy!
