Was a plain tomato sandwich also your favourite sandwich as a kid?! Toasted bread, 2 thick slices of tomato and a pinch of salt – that’s all. While the original tomato sandwich is still a 10/10 in my books, my grown up self wanted to re-brand the tomato sandwich to fit my adult taste buds, if you will. This recipe does exactly that, here you have the classic tomato sandwich but with a totally new depth of flavour that is simply *chefs kiss*
Ingredients:
- bread of choice, toasted
- tomato, sliced
- salt, to taste
- pepper, to taste
- goats cheese
- arugula
- balsamic reduction
- the “tomato dressing,” as I like to call it (see below)
Tomato Dressing:
- 1/2-1 tbsp olive oil
- 1 tbsp parsley, chopped
- 1 tsp minced garlic
- 2 tsp shallot, diced
- 2 tsp capers, loosely chopped
- 1/4 lemon, squeezed
Instructions:
- Toast your bread of choice.
- Meanwhile, in a small bowl, mix together all the ingredients for the tomato dressing.
- To assemble the sandwich, spread a generous amount of goat cheese on one slice of toasted bread.
- On the other slice, layer tomato slices and season with salt and pepper.
- Spoon the tomato dressing over the tomatoes, then add a small handful of arugula on top of the goat cheese.
- Drizzle a bit of balsamic reduction over the arugula, close the sandwich, and slice in half. Enjoy!
