Was a plain tomato sandwich also your favourite sandwich as a kid?! Toasted bread, 2 thick slices of tomato and a pinch of salt – that’s all. While the original tomato sandwich is still a 10/10 in my books, my grown up self wanted to re-brand the tomato sandwich to fit my adult taste buds, if you will. This recipe does exactly that, here you have the classic tomato sandwich but with a totally new depth of flavour that is simply *chefs kiss*

Ingredients:

  • bread of choice, toasted
  • tomato, sliced 
  • salt, to taste
  • pepper, to taste
  • goats cheese
  • arugula 
  • balsamic reduction 
  • the “tomato dressing,” as I like to call it (see below)

Tomato Dressing:

  • 1/2-1 tbsp olive oil
  • 1 tbsp parsley, chopped
  • 1 tsp minced garlic 
  • 2 tsp shallot, diced
  • 2 tsp capers, loosely chopped
  • 1/4 lemon, squeezed

Instructions:

  1. Toast your bread of choice.
  2. Meanwhile, in a small bowl, mix together all the ingredients for the tomato dressing.
  3. To assemble the sandwich, spread a generous amount of goat cheese on one slice of toasted bread.
  4. On the other slice, layer tomato slices and season with salt and pepper.
  5. Spoon the tomato dressing over the tomatoes, then add a small handful of arugula on top of the goat cheese.
  6. Drizzle a bit of balsamic reduction over the arugula, close the sandwich, and slice in half. Enjoy!
