These Tuna Salad Lettuce Boats are ideal for a light, refreshing lunch. Made with tuna, cherry tomatoes, capers, and a zesty lemon-mayo dressing. Perfect for meal prep as a quick low-carb lunch!

Ingredients:

  • 1 can tuna, drained
  • 5-6 cherry tomatoes, sliced
  • 1/4 red onion, diced
  • 2 baby pickles, diced
  • 1 tbsp capers
  • feta cheese, crumbled (amount to preference)
  • 1 tbsp mayo
  • juice of 1 lemon
  • 1 tsp chili flakes
  • 1 tsp garlic powder
  • salt, to taste
  • pepper, to taste

Instructions:

Prepare the Tuna Salad: in a large mixing bowl, combine the drained tuna, cherry tomatoes, red onion, pickles, capers, and crumbled feta.

Add Seasoning: add the mayonnaise, lemon juice, chili flakes, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well combined.

Assemble the Wraps: spoon the tuna salad into romaine lettuce leaves (or your preferred type of lettuce).
