My Avocado Cannellini Bean Smash goes with anything and everything! I like adding it to crispy toast with cheese and micro greens, as seen below, as well as in a quesadilla (recipe here).

Avocado Bean Smash Ingredients:

  • 1 can cannellini beans, drained and rinsed 
  • 1 avocado 
  • 2-3 garlic cloves, minced
  • 1 tsp paprika 
  • 1/2 tsp chili flakes 
  • salt, to taste
  • pepper, to taste 
  • 1 tbsp parsley, chopped
  • 1 tbsp olive oil 
  • 1/2 lemon, squeezed

Assemble with:

  • a thick slice of crispy toast 
  • spread of dijon mustard 
  • sliced gouda cheese
  • a heaping spoonful of the Avocado Bean Smash 
  • small handful micro greens

Instructions:

  1. To make the Avocado Bean Smash, add all ingredients into a bowl, and using a fork, smash until combined.
  2. Meanwhile, toast a thick slice of bread (or two) until nice and crispy – I like to do this in a pan with olive oil, or you can use a toaster.
  3. To assemble, spread dijon mustard onto the crispy toast, add a slice of gouda cheese, spread on a heaping spoonful of the smash, and top with micro greens. Enjoy!
