This Air-Fryer Chicken & Veggie Dinner is a quick and easy meal for one. Featuring juicy, seasoned chicken with crispy potatoes and veggies – it’s truly perfect for a cozy, hassle-free dinner!

Ingredients:

  • 1 medium potato, cubed
  • 1 medium onion, sliced
  • 1/2 red pepper, sliced
  • 2-3 garlic cloves, minced
  • 2 tbsp olive oil
  • Seasonings to taste:
  • paprika, Italian herbs, dried rosemary, chili flakes, salt, and pepper
  • 1 bone-in, skin-on chicken thigh
  • 1 bone-in, skin-on chicken drumstick
  • Additional seasonings for the chicken (same as mentioned above)
  • 2 knobs of garlic butter
  • 1/2 lemon

Instructions:

Prepare the Air-Fryer Basket:
Place a sheet of parchment paper in your air fryer basket. Add the cubed potato, sliced onion, red pepper, minced garlic, and olive oil.

Season the Veggies:
Sprinkle the seasonings (paprika, Italian herbs, rosemary, chili flakes, salt, and pepper) generously over the vegetables. Toss everything together until well-coated.

Season and Add the Chicken:
Place the chicken thigh and drumstick on top of the seasoned veggies. Sprinkle the same seasonings over the chicken, and if desired, add a knob of garlic butter on top of each piece of chicken for extra flavor.

Add the Lemon:
Place half a lemon in the basket alongside the chicken and veggies.

Air-Fry:
Air-fry at 200°C (400°F) for 25-30 minutes. Halfway through cooking, flip the chicken over to allow the other side to brown evenly, and give the veggies a quick toss.

Serve:
