Need a break from tuna salad sandwiches? Try this hearty White Bean Salad Sandwich with a flavourful mix of cannellini beans, veggies, and a delicious blend of spices! Made with the bread of one of my go-to brands, Food for Life.

White Bean Salad:
- 1 can cannellini beans, drained and rinsed
- 1/4 red onion, diced
- 1 green onion, chopped
- 1/4 red pepper, diced
- 5-6 jalapeños, diced
- 1 tbsp capers
- 2 tbsp mayo
- Feta cheese, crumbled (to taste)
- Juice of 1/4 lemon
- 1/2 tsp chili flakes
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper, to taste
To Assemble the Sandwich:
- 2 slices of Food for Life’s Ezekiel 4:9 Sprouted Whole Grain Bread, (or bread of choice)
- Extra mayo (optional)
- Small handful of arugula
- Thinly sliced tomato
- Prepared White Bean Salad
Instructions:
Make the White Bean Salad:
- In a bowl, add the cannellini beans and mash them with a fork until mostly combined but still a little chunky.
- Add the red onion, green onion, red pepper, jalapeños, capers, mayo, feta, lemon juice, chili flakes, garlic powder, smoked paprika, salt, and pepper.
- Mix thoroughly until all the ingredients are well combined.
Assemble the Sandwich:
- Toast the bread if desired. Spread a thin layer of mayo on one side of each slice.
- On one slice, layer arugula and thinly sliced tomato.
- Spoon a generous amount of the White Bean Salad over the veggies.
- Top with the second slice of bread.
Serve:
