You HAVE to try my flavourful Prune & Pistachio Crusted Salmon Bake. It’s loaded with roasted veggies, lemon, and covered in a delicious sweet and savory crunchy topping. A wholesome, easy one-pan meal that’s perfect for any occasion!
Ingredients (serves 2):
- 12 baby potatoes, quartered
- 5 tbsp olive oil
- 1 tsp paprika
- 1 tsp salt, plus more to taste
- 1 tsp pepper, plus more to taste
- 8 California Prunes (4 chopped, 4 whole)
- 1/2 cup pistachios, chopped
- 2 salmon fillets
- 2 tbsp Dijon mustard
- Chili flakes, to taste
- 2 handfuls cherry tomatoes
- 1 lemon, halved
- 6 sprigs broccolini
- 6 cloves garlic, minced
Instructions:
- Preheat and Roast the Potatoes:
Preheat your oven to 425°F (220°C). Place the quartered baby potatoes on a baking tray. Drizzle with 2 tbsp olive oil, and season with paprika, salt, and pepper. Toss to coat, then bake for 10 minutes. - Prepare the Prune & Pistachio Topping:
While the potatoes are roasting, finely chop 4 California Prunes and set aside. Chop the pistachios and set aside. - Prepare the Salmon:
Spread 1 tbsp Dijon mustard over each salmon fillet, covering the top and sides. Season with salt, pepper, and chili flakes to taste. Once the potatoes have baked for 10 minutes, remove the tray from the oven. - Add the Crust:
Evenly sprinkle the chopped prunes over the tops of the salmon fillets, then spoon on the chopped pistachios. Gently press down to adhere the crust to the salmon. - Arrange the Tray:
Push half of the potatoes to one side of the tray and the other half to the opposite side, creating space in the center. Place the salmon fillets in the middle of the tray. Add the following to the tray:- Halved lemon on each side
- 2 handfuls cherry tomatoes
- 4 whole California Prunes
- 3 sprigs of broccolini on each side
- Minced garlic sprinkled evenly over everything
- Finish and Bake:
Drizzle 3 tbsp olive oil over the entire tray, and season with additional salt and pepper to taste. Bake for 15 minutes, or until the salmon is cooked through and flakes easily with a fork. - Serve:
Remove the tray from the oven, squeeze the roasted lemons over the salmon and veggies, and serve immediately. Enjoy this flavorful one-pan meal!
