Ready in under 20 minutes, breakfast really can’t get easier than this! The only catch is that you need to have those disposable air-fryer inserts to make this in the air-fryer. If you don’t have either of these things, then you can simply rather bake it in the oven. Happy cooking!

Ingredients:

  • 1 tbsp olive oil (or use olive oil spray)
  • 4 eggs
  • 3 mushrooms, sliced
  • 1/4 red onion, diced
  • 1/4 red pepper, diced
  • 1/4 yellow pepper, diced
  • 1 clove garlic, minced
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • pinch of chili flakes
  • salt and pepper, to taste
  • feta cheese, crumbled to taste
  • 1 tbsp fresh parsley, chopped

Instructions:

Prep the Air Fryer Dish:
Place a disposable air-fryer insert into the air-fryer.

Mix the Frittata Ingredients:
Directly in the air-fryer insert, crack in the eggs. Then add the sliced mushrooms, diced red onion, red pepper, yellow pepper, minced garlic, paprika, Italian seasoning, chili flakes, salt, and pepper. Gently whisk the eggs and mix everything to combine the ingredients.

Add the Toppings:
Sprinkle the crumbled feta cheese and chopped parsley evenly on top.

Cook the Frittata:
Place the dish in the air fryer and cook at 200°C (400°F) for 12-15 minutes, or until the eggs are fully set and cooked through.

Garnish and Serve:
Remove the frittata from the air fryer and let it cool slightly. Top with fresh dill, if desired, and serve with a side of fresh fruit for a balanced breakfast.
