A classic that never gets old!
Ingredients:
- 1 bagel, toasted
- 4-5 slices smoked salmon
- 2 eggs, scrambled
- 2 tbsp cream cheese
- 5 slices cucumber
- a few slices red onion
- small handful micro greens
Instructions:
- Toast the bagel and set aside. Meanwhile, prep your veggies for the bagel by slicing the cucumber and red onion.
- In a pan on medium heat, scramble the eggs until cooked (add oil or butter if desired when cooking).
- To assemble, spread cream cheese on one side of the bagel, and top with the rest of ingredients: scrambled eggs, smoked salmon, cucumber, red onion, and micro greens. Close the bagel, slice in half, and enjoy!
