Need a break from tuna salad sandwiches? Try this hearty White Bean Salad Sandwich with a flavourful mix of cannellini beans, veggies, and a delicious blend of spices! Made with the bread of one of my go-to brands, Food for Life.

White Bean Salad:

  • 1 can cannellini beans, drained and rinsed
  • 1/4 red onion, diced
  • 1 green onion, chopped
  • 1/4 red pepper, diced
  • 5-6 jalapeños, diced
  • 1 tbsp capers
  • 2 tbsp mayo
  • Feta cheese, crumbled (to taste)
  • Juice of 1/4 lemon
  • 1/2 tsp chili flakes
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

To Assemble the Sandwich:

  • 2 slices of Food for Life’s Ezekiel 4:9 Sprouted Whole Grain Bread, (or bread of choice)
  • Extra mayo (optional)
  • Small handful of arugula
  • Thinly sliced tomato
  • Prepared White Bean Salad

Instructions:

Make the White Bean Salad:

  • In a bowl, add the cannellini beans and mash them with a fork until mostly combined but still a little chunky.
  • Add the red onion, green onion, red pepper, jalapeños, capers, mayo, feta, lemon juice, chili flakes, garlic powder, smoked paprika, salt, and pepper.
  • Mix thoroughly until all the ingredients are well combined.

Assemble the Sandwich:

  • Toast the bread if desired. Spread a thin layer of mayo on one side of each slice.
  • On one slice, layer arugula and thinly sliced tomato.
  • Spoon a generous amount of the White Bean Salad over the veggies.
  • Top with the second slice of bread.

Serve:
Slice in half and enjoy. The White Bean Smash makes up to 3 sandwiches – save the leftovers for easy sandwich meal prep the next day!
