With only 6 ingredients, this breakfast truly doesn’t get easier.
Ingredients:
- 4 tbsp chia seeds
- 1 can coconut milk
- 2/3 cup frozen raspberries (or fruit of choice)
- 1 tsp vanilla extract
- pinch of salt
- 1-2 tbsp honey (sub maple syrup to be vegan)
Instructions:
- Add all ingredients to a blender and blend until smooth.
- Divide the blended chia pudding in 2 portions and pour into small jars or Tupperware of choice. Top with your favourite toppings (see below for examples), and store in the fridge.
You can eat this right away, but I prefer it to be cold, so I like to prep this breakfast the night before. Makes for easy meal prep for a grab and go breakfast!
